Ingredients

  1. 3 pound Whole Chicken, cut into 8 to 9 pieces 
  2. 2 cups Buttermilk
  3. 1 ½ cup Louisiana Hot Sauce
  4. 2 cups Flour
  5. 4 cups Canola Oil for frying
  6. 1 tablespoon Cornstarch
  7. ½ teaspoon Garlic Powder
  8. ½ teaspoon Onion Powder
  9. ¾ tablespoon Dijon Spicy Mustard
  10. ½ teaspoon Ground Cayenne Pepper 
  11. 1 teaspoon Black Pepper
  12. ½ teaspoon Paprika
  13. 2 teaspoons Celery Salt
  14.  ½ tablespoon Cajun Seasoning
  15. ½ teaspoon Rosemary
  16. ½ teaspoon Ground Oregano
  17. ½ teaspoon Dried Thyme 
  18. ½ teaspoon Dried Sage

Ingredients for Louisiana Hot Sauce

  1. ½ teaspoon Cayenne Pepper
  2. 1 teaspoon Salt
  3. 1 tablespoon White wine vinegar
  4. ½ Cup Melted Unsalted Butter
  5. 1 ½ Cups Chicken broth
  6. 2 tablespoon Flour
  7. 1 tablespoon Finely Chopped Green pepper
  8. ½  tablespoon Chopped Onion 

Instructions

Step 1: Marinate and Season the Chicken

Take a large chicken and cut them into 8 to 9 pieces. Wash the chicken and remove dark spots or dirt. Wipe out the chicken pieces. For this step, you can use a plastic zip bag or a mixing bowl.

Pour 2 cups of buttermilk. Then combine the buttermilk with 1 teaspoon of Celery salt,  ¾ tablespoon of Dijon spicy mustard, ½ teaspoon of ground cayenne pepper, 1 teaspoon of black pepper, 1 teaspoon of Cajun seasoning, and ½ cup of hot sauce.  Mix well with a beater. Toss the chicken into the buttermilk mixture. If you are putting the chicken into a plastic zip bag, shake the bag well. Your chicken must get fully coated with a buttermilk mixture.

Covering the chicken, let it rest for at least one hour in a refrigerator.

Step 2: Prepare Flour with Seasoning Mixture

While the chicken is resting, take another plastic zip bag or a mixing bowl again. Place 2 cups of flour into it. Then add 1 tablespoon of cornstarch, ½ teaspoon of garlic powder, ½ teaspoon of onion powder, ½ teaspoon of ground cayenne pepper, 1 teaspoon of black pepper, ½ teaspoon of paprika, 2 teaspoons of celery salt,  ½ tablespoon of cajun seasoning½ teaspoon of rosemary, ½ teaspoon of ground oregano, ½ teaspoon of dried thyme, ½ teaspoon of dried sage to the flour.  Using a hand beater, mix all the ingredients.

Or you can shake the bag if you are using a plastic bag. 

Step 3: Coat and Dip the Chicken Pieces to Fry

Remove the chicken pieces from the refrigerator. Dip the chicken pieces one by one into the flour and spice mixture. Shake the bowl or the bag to ensure the chicken gets fully coated. Flip the chicken pieces. Then place all the chicken on a rack or a strainer. 

Step 4: Deep Fry the Chicken in Louisiana Style

In a large skillet or a deep fryer, pour 2-inch deep vegetable oil or canola oil. Heat the oil on a high flame until it reaches 350 degrees Fahrenheit. Check the temperature before starting cooking.  Then low down the flame and consciously add the chicken pieces to the oil one by one.

It will start bubbling. Don’t flip until the lower part of the chicken gets hard. After a while, use a thong to flip the chicken pieces and let it fry for 10 minutes on a medium flame.  When the chicken is fully fried, it will turn brown and come up with a nice fragrance. Remove the chicken from the oil and place on a serving plate. Use a paper towel to remove the extra oil. 

Step 5: Prepare Louisiana Hot Sauce

Melt unsalted butter in a saucepan. Add 1 tablespoon of finely chopped green pepper, ½  tablespoon of chopped onion to the butter. Fry them for a while.  Then add 2 tablespoons of flour and incorporate with the melted butter. Stir flour until it forms a paste. Then pour some chicken broth.

Don’t pour all the chicken broth at a time. Use a little amount of it and mix it with the flour and butter paste.  Add ½ teaspoon Cayenne Pepper, 1 teaspoon Salt, and 1 tablespoon White wine vinegar sequentially.  You can add some tomato hot sauce though it is not mentioned in the recipe ingredients.

Stir the whole mixture until it reaches a thick texture. When it forms like a paste, remove it from the pan and pour it into a sauce cup. 

Step 6: Season, Serve, and Enjoy

Garnish the deep-fried chicken pieces with mentioned herbs and black pepper. Place the sauce cup with Louisiana hot pepper sauce on the middle of the plate. Serve and enjoy the authentic Louisiana buttermilk fried chicken.
