  6. 4 to 5 Bangladeshi Large Cinnamon
  7. 3 Dry Bay Leaves
  8. 7 to 8 Fresh Cardamoms

  10. 1 tablespoon Black Pepper Corns
  11. 7 to 8 Large Green Pepper
  12. 1 ½ Cup Chopped Onion
  13. 1 teaspoon Turmeric Powder
  14. 3 teaspoons Red Chilli Powder
  15. 1 ½ Cup Vegetable Oil or Mustard Oil
  16. ½ Cup Garam Masala Mix

My 1 kg Mutton Curry Cooking Instructions

Step 1: Separate pieces from Mutton

Separate the pieces from 1 Kg mutton using a saw. Try to cut it into small pieces. Mainly 20 to 25 pieces are good for the recipe. The mutton should not be too fatty for this recipe. Rinse the mutton pieces with clean water. Then use a paper towel to drain the water.

Step 2: Complete the Marination of Mutton

After drying the mutton, place the pieces in a mixing bowl. Add 1 teaspoon of turmeric powder, 2 teaspoons of chili powder, ½ cup of whisked sour yogurt, ½ cup of ginger paste, and 1 teaspoon of salt to the mutton.

Mix well with your hands.  After completing the marinade, store it for one hour. It helps remove the rawness easily. 

Step 3: Saute the Spices

In a large wok or skillet, pour 1 cup of vegetable oil. You can use mustard oil instead. It gives a delightful fragrance to the dish. Heat the oil on a high flame for two minutes.

Then lower the flame and add 1/2 cup of garam masala. Saute it for one minute. Then add 4 to 5 large Bangladeshi cinnamon sticks, 3 dry bay leaves, 7 to 8 fresh cardamoms, 9 to 10 cloves, and 1 tablespoon of black peppercorns. Saute them on a medium flame.

Add 1 tablespoon of finely chopped garlic and 1 1/2 cups of chopped onion to it after simmering for two minutes. Cook the onion and garlic until they turn golden brown.

Step 4: Cook the Mutton with spices

Put all the mutton pieces in the skillet. Stir the whole mixture with the mutton for two minutes. The spices should get into the mutton. Then cover the skillet. Heat it on a medium flame until all the moisture comes out of the mutton and it gets dry. This allows the spices to enter the mutton properly.

After heating for 5 minutes, add some hot water to the wok. Again, cover the work and wait for three minutes. In this step, you can add some coconut milk or sour yogurt. It will add a rich flavor to the mutton.

Then peel off the tomatoes using tongs. Cut the tomatoes into two or three pieces. Put the tomato pieces in the middle of the mutton pieces. Boil the tomatoes, covering the skillet.

Note that every time I add water, I dry the water properly. But this time I will keep half of the water. Adding hot water makes the mutton tender.

Cook the mutton for 7 to 8 minutes. You will find a nice aroma coming from the mutton. And the grave will get thick.
