Making Process of Sri Lankan Wedding Cake
To make a Srilankan wedding cake, you must follow four parts of the making process.
Step 1: Chopped the Dry Fruits
In a food processor, chop up the pumpkin preserves, chow chow, raisins, sultanas, dates, and candied peel until they are small pieces but not a paste. Make small pieces of cashews by cutting them. Mix all the chopped dry fruits.
Step 2: Add Flavor and Spices With the Dry fruits
After combining all the dry fruits, season with cinnamon powder, nutmeg powder, clove powder, cardamom powder, honey, golden syrup, plum jam, Almond essence, Vanilla essence, Maple syrup, brandy, and rose water. Mix all ingredients and marinate in a cool, dark place overnight. Or you can marinate it for 2-3 days.
Step 3: Make the Cake Batter
Cook the semolina over medium heat until golden brown and fragrant. To form soft peaks, beat the egg whites until they are foamy. Leave the egg whites aside for later use.
Lightly beat the butter and sugar with a mixer until they are fluffy. Mix egg yolks one at a time until well combined.
Step 4: Combine the Cake Batter
Place the butter/sugar mixture and egg yolks into a large bowl. Slowly add the mix of marinated fruit/nuts and toss until combined. After that, add a few tablespoons of the semolina mixture and mix again until well combined.
After that, add the egg whites and fold them in. Combine well between each addition of these three ingredients and repeat until all the ingredients have been added.
Step 5: Now Baked Your Cake
Set the oven to 300°F, line a baking pan with parchment paper, and brush butter on it. Pour batter into the pan and place it on a large baking sheet for stability and to prevent it from getting too dark.

- Raisins - 250g
- Sultanas - 150g
- Candied Peel- 200g
- Cardamom Powder- ½ Tsp
- Cinnamon Powder - 1 Tsp
- Grated Fresh Nutmeg - 1 Tsp
- Clove Powder - ½ Tsp
- Semolina - 500g
- Unsalted Butter -250g
- White Granulated Sugar -500g
- Egg -15
- Brandy - 500ml
- Rose Water -2tbsp
- Honey -250ml
- Almond Essence -2tbsp
- Vanilla Essence-2 Tbsp
- Plum Jam- 250g
- Maple Syrup- 2 Tbsp
- Make small pieces from the dates by de-seeding them and chopping them up. Also, chop the pumpkin preserve, chow chow, candied peel, cashews, and ginger preserve.
- In a large bowl, combine all the ingredients. Stir it well.
- Keep it in a cool, dry place overnight in large jars or containers.
- In a pan, roast semolina until it becomes slightly grainy and golden brown.
- Now mix the butter and sugar until it becomes fluffy.
- Beat the egg white until it becomes a soft peak.
- Then, mix egg yolks with this butter and sugar combination. Stir until it becomes creamy.
- Combine the marinade ingredients, buttercream, egg white, and roasted semolina in a large bowl.
- After that, prepare your oven by preheating 300F and set a large baking tray with parchment paper and brush butter in the parchment.
- Then, bake your cake for 4 hours.
