  4. 1 Teaspoon Salt
  5. 1 ½ Teaspoons Baking Soda
  6. ½ Tablespoon Baking Powder
  7. 1 Teaspoon Cornstarch
  8. 1 Cup Unsalted Butter, Softened at Room Temperature  
  9. 1 Cup Whole Milk
  10. 1 Teaspoon Strawberry Extract/Strawberry Emulsion 
  11. 2 Tablespoons Sour Cream/Heavy Cream 
  12. ½ Tablespoon Lemon Juice
  13. 1 ½ Teaspoons Vanilla Extract
  14. 1 Teaspoon Lemon Extract
  15. ½ Teaspoon Pink Food Color

How to Make Strawberry Wedding Cake at Home

Step 1: Blend Strawberries and Make Pulp

This is the first step of the process. Try to make the pulp or the strawberry reduction before baking. Take 15 to 20 fresh, ripe strawberries and wash them. Put them in an electric blender. Add 1 cup of water to the blender.

Blend all the strawberries for at least 5 minutes. Ensure that there is no lump left and that it is completely pureed.

Then place the strawberry pulp on a frying pan

Then place the strawberry pulp on a frying pan. Heat it for 2 minutes. While the puree is heating, add 1 tablespoon of lemon juice, 1/2 tablespoon Kirsch, 1/4 teaspoon salt, and 1 cup white powdered sugar. Simmer them continuously using a beater or spatula.

Continue to stir the mixture and heat it for 6 to 10 minutes. Add some pink food coloring if the color isn’t deep pink. After reducing the pulp by half, remove it and chill it off the stove. After cooling, store in a refrigerator for at least 2 to 3 hours.

Combine the flour and mix ingredients in a mixing bowl. These ingredients are 2 cups of cake flour or 14 ounces of pastry flour, 1 teaspoon of salt, 1 ½ teaspoon of baking soda, ½ tablespoon of baking powder, and 1 teaspoon of cornstarch.

Mix them with a hand mixer. Ensure all the ingredients are finely incorporated. Store it for use in the baking mix.

Step 3: Make Baking Essential Mix

Then add the egg whites of four eggs

First, put parchment paper in a 9 x 2-inch round baking pan. Grease and flour the parchment paper using a cooking brush. 

In the baking pan, beat 1 cup of softened butter, adding 1 cup of caster sugar. Beat these two items at medium speed. You will get a creamy, foamy look from the softened butter. 

Then add the egg whites of four eggs. Beat them with an electric beater for a while. Finally, add the flour mix, 1 Cup Whole Milk, 1 teaspoon Strawberry Extract/Strawberry Emulsion, 2 tablespoons Sour Cream/Heavy Cream, ½ tablespoon Lemon Juice, 1 ½ teaspoons Vanilla Extract, 1 teaspoon Lemon Extract, ½ teaspoon Pink Food color, and 1 Cup Strawberry Reduction gradually.

Continue stirring with the stand mixer at the lowest speed while adding the ingredients. When you find a thick baking mix with no lumps, stop. 

Step 4: Bake the Strawberry Cake

Before baking, the most important thing to do is preheat the oven. Set the temperature to 350 degrees Fahrenheit. Preheat it until the desired temperature is reached.

Then put the baking pan into the oven. Set the timer for 15 minutes. Start baking. After 15 minutes, check if it is fully baked. To check, you can put a toothpick into the cake. If it comes out smooth, it is completely baked. Otherwise, bake it for another 5 to 10 minutes. After completing baking, remove the cake from the pan. Bake the baking mix three times.

Finally, level up the top surface of the cake.

Put 1 cup of unsalted, softened butter in a stand mixer. Add 1 cup of confectionary sugar and mix it at medium speed. 

Add 1 cup of  Creme Patissiere Powder, 1 tablespoon of sugar syrup, 2 cups of whipped cream, ½ teaspoon of pink Food Color, ½ teaspoon of vanilla extract, 1 teaspoon of strawberry reduction, and ½ teaspoon of Strawberry Emulsion to the butter. Continuously stir, and you’ll get your buttercream frosting ready.

Step 6: Decorate and Serve the Cake

This cake is a one-tier cake. You can make it two-tiered too. Take each cake part and apply buttercream frosting all over its surface. Then apply the strawberry pulp on top of each baked cake. Arrange the cake parts one by one, applying buttercream frosting and strawberry reduction.
