Ingredients

  1. 8 Cups Cake Flour 
  2. 3 ½ Cups Caster Sugar or Granulated 
  3. 6 Cups Unsalted, Softened Butter (at Room Temperature)
  4. 4 Cups Whole Milk
  5. 3 Cups Whipped Heavy Cream 
  6. 6 Egg Whites
  7. 4 Whole Eggs
  8. 5 tablespoons Baking Powder
  9. 3 tablespoons Baking Soda
  10. 2 teaspoons Vanilla Extract
  11. 2 teaspoons Ground Cinnamon
  12. 2 teaspoons Almond Powder
  13. 2 tablespoons Brandy
  14. 2 teaspoons Orange Zest
  15. 3 teaspoons Lemon Zest
  16. 3 teaspoons Raisin

Ingredients For Frosting:

  1. 7 Cups Unsalted, Softened Butter
  2. 2 Cups Caster Sugar
  3. 2 Cups Whipped Cream
  4. 1 tablespoon Lemon Zest
  5. 1 Cup Sour Cream 

Ingredients for Decorating:

  1. 4 Kg Marzipan
  2.  5 Cups Icing Sugar
  3. 8 Cups Apricot Jam
  4. 8 Cups Peach Jam
  5. 3 tablespoons Edible Dust
  6. Edible Ice Sugar Flower 
  7. Edible Glue
  8. 10 to 12 Fresh Cherries for Decoration

Instructions

Step 1: Preheat the Oven

Turn on the oven's switch. Preheat the oven to 160 degrees Celsius (350 degrees Fahrenheit) for 5 minutes. Turn off the switch after preheating.

Step 2: Grease and Flour Baking Pans

Take two 10-inch baking pans for the bottom tier. Then take two 8-inch baking pans for the middle tier and two 6-inch baking pans for the top tier. Every pan must be 3 inches deep.

Put parchment or greaseproof paper on the pans and the sides of the pans. Then apply butter to grease the pans. And finally, flour the pans. You can complete the task with a cooking silicon brush. 

Step 3: Make Thick Baking Batter

Put a large bowl under a stand mixer. It is better to prepare the batter for every tier separately. You need to use half of the batter ingredients for the bottom tier, three-fourths for the middle tier, and one-fourth for the top tier.  

If you prepare the whole batter once, then put 8 cups of cake flour, 5 tablespoons of baking powder, and 3 tablespoons of baking soda in a separate bowl. Mix them using a beater.

Keep the flour mixture aside. Take 6 cups of unsalted butter (softened at room temperature) into the bowl under the stand mixer. Keep mixing at a low speed. Then gradually add 3 ½ Cups of Caster Sugar or Granulated, 4 Cups of Whole Milk, 3 Cups of Whipped Heavy Cream, and 6 Egg Whites. Beat these ingredients at medium speed for more than three minutes. 

Then add 4 whole eggs, 5 tablespoons baking powder, 3 tablespoons baking soda, 2 teaspoons vanilla extract, 2 teaspoons ground cinnamon, 2 teaspoons almond powder, 2 tablespoons brandy, 2 teaspoons orange zest, 3 teaspoons lemon zest, and 3 teaspoons raisins to the mixture.

Beat at the lowest speed for at least 10 minutes. Ensure there is no lump in the batter and it is smoothly finished. Place the batter into the greased and floured baking pan.

Step 4: Bake Every Tier of the Cake

Place the baking pan in the preheated oven. You need to bake different tiers at different times. First, bake the bottom tier for 35 to 40 minutes. Then bake the middle tier for 20 to 25 minutes. Finally, bake the top tier for 15 minutes. Don’t forget to check if the batter has been baked completely.

To check, put a toothpick into the cake. If it comes out clean, ensure your cake has been baked completely. After baking them, level up the surface using a cake leveler. Or you can use a 15-inch-long knife for leveling up.

Step 5: Frost the Wedding Cake 

Set a medium-sized mixing bowl under the stand mixer. Put together 7 cups of unsalted, softened butter and 2 cups of caster or white powder sugar. Whisk it at high speed for two minutes. Then add 2 cups of whipped cream, 1 tablespoon of lemon zest, and 1 cup of sour cream to it.

Again, whisk the mixture at medium speed for three to five minutes. After preparing the buttercream frosting, apply it to the cakes' leveled surfaces. Make a crumb-free frosting using a cake scraper. Put a wide layer of cream on the whole surface of the cake. After frosting the cake, chill it overnight.

Step 6: Decorate like a Vintage Wedding Style 

First, roll on marzipan to the size of the top surface of the cake. Put marzipan on the surfaces of the three tiers. Then put the middle tier on the bottom tier very cautiously. And then place the top tier on the middle tier. Now, take some icing sugar and make small balls from it. You can make another shape.

Stick these balls to the edge of the cake using edible glue. Spread some edible dust to have a glazy look. Gently spread apricot and peach jam on the top surface. Place the iced sugar flower on top of the cake. Put some cherries in a bowl and spread the edible dust again. You can apply your own preferences while decorating the cake.

After completing the decoration, enjoy it in a wedding ceremony.
