Kulfi Malai is a rich and creamy frozen dessert originating from Asian cuisine. It’s perfect for beating the summer heat. “Malai” refers to the thickened milk base that gives kulfi its unique taste and consistency. The main ingredients are milk and brown sugar.

These ingredients create a luscious and indulgent dessert loved by all ages.

Main Ingredients of Pakistani Kulfi

  1. Evaporated Milk- 1 Can (12 Oz) or 500 ml
  2. Sweetened Condensed Milk- 250 to 350 ml
  3. Whipped Cream-250 ml or 1 Cup
  4. Pistachios-1 Tablespoon
  5. Crushed Cardamom Seeds-½ Teaspoon
  6. Crushed Almonds-1 Teaspoon 
  7. Corn Starch-1 Tablespoon
  8. Brown Sugar-1 Tablespoon 
  9. Coconut Flakes- 2 Tablespoons
  10. Edible Dried Rose Petal- ½ Teaspoon 
  11. Khoya- 3 Cups (Optional)

How to Make Pakistani Kulfi at Home

Step 1: Simmer Sugar, Khoya, and Milk

Pour 500 ml of evaporated milk and 1 tablespoon of brown sugar into a cooking pot. Add 3 cups of khoya, or crumbled milk solids, to the milk. Boil the milk with sugar and khoya for 15 minutes. Ensure that sugar and khoya are fully dissolved into the evaporated milk.

You can add more sugar if you want the kulfi malai sweetened. However, in this recipe, I have used condensed milk. So it is better to use only 1 tablespoon of brown sugar in this step.

Step 2: Whisk and mix Kulfi Malai Ingredients

In a mixing bowl, take 2 cups of whipped cream, 1 tablespoon of pistachios, 1/2 teaspoon of crushed cardamom seeds, 1 teaspoon of crushed almonds, 1/2 teaspoon of edible dried rose petals, and 1 tablespoon of corn flour.

Whisk all of these ingredients and finely mix them up. Now add this malai mixture to the boiled milk. Again, simmer the milk with this malai mixture and make it dense.

Step 3: Boil and Condense Milk Mixture

When the milk forms a dense and saucy form, add 1 cup of sweetened condensed milk. Stir the mixture continuously for 5 minutes.

When the condensed milk is fully dissolved, turn off the stove. Cool the liquid kulfi malai to a normal temperature.

Step 4: Freeze Kulfi Malai

After chilling Kulfi Malai, pour it into ice cream molds. Freeze the mixture overnight. Sprinkle some crushed almonds and pistachios over it. Enjoy Pakistani Kulfi Malai. 

Why is My Kulfi Icy?

If your Kulfi turns out icy, there are a few potential reasons. To prevent this, avoid using low-fat or skim milk, which can affect the creaminess. It is also important to cook the kulfi mixture on low heat for longer and use the correct amount of condensed milk for sweetness.

The condensed milk helps maintain creaminess and prevents ice crystals from forming. Another possible reason for an icy texture is an improper balance of milk and sugar or not cooking the kulfi mixture sufficiently, resulting in excess water content.
