You must have heard about the Chinese mango pudding. Their mango pudding has been a favorite worldwide.

It doesn’t matter if your country’s restaurant does not have mango pudding available. I can help you to make it yourself with this easy recipe.

Chinese mango pudding is a sweet, refreshing, and popular dessert. It can be made with simple ingredients we often see in our house. Like- sweet mangoes, sugar, condensed milk, etc.

The combination of creamy mango puree and the smooth texture of the pudding is what makes Mango Pudding so irresistible. This dessert is perfect for those hot summer days when you crave something sweet but light. The vibrant yellow color and the tropical aroma of mango will transport you to a sunny paradise with just one bite.

Ingredients for This Mango Pudding Recipe

  1. 3 Fresh Mangoes 400g
  2. 100 Ml Clean Water
  3. 2 Packs of 29g Gelatine Powder or Agar Agar Powder
  4. 60g Sugar or Monk Fruit Sugar
  5. Condense Milk, Coconut Milk, or Evaporated Milk (Depends on How Much Thick You Want the Topping to Be)
  6. 400 Ml Heavy Cream or Coconut Milk
  7. 2 or 3 Mango Dice for Garnish

For Toppings (Optional)

  1. Coconut Flakes
  2. Sago
  3. Tapioca Pearls
  4. Fresh fruits

How to Make Chinese Mango Pudding Recipe

Step 1: Prepare The Mangoes

Wash the fresh and ripe mangoes properly and pat dry them in a clean cloth. Then peel and pit the mangoes so that you can make cubes of them. 

Step 2: Blend The Mangoes

So now, I have prepared two cups of mango chunks. I will blend them in the food processor by adding some drinking water into the blender. Then all my mango flesh will turn into mango puree.

Step 3: Strain The Mango Pulp

Mango fibers don’t make the pudding as fine as I want. So I will use a mesh sieve and run the mango pulp over it. You can also do the same if we have similar tastes. Then set aside the strained mango pulp.

Step 4: Mix The Ingredients

Here, I will mix the key ingredients in a large bowl. Firstly, I am going to add cold water to it, then gelatin powder and sugar. I will be using 2% of gelatin for this mixture.

But if you are a vegan, go with Agar Agar powder instead of gelatin powder. It goes well with a lot of desserts, and agar-agar is a great alternative to animal-based gelatin.

You can add sugar depending on how sweet you prefer. However, I am going to whisk everything now. Use Monk fruit sugar if you are health-conscious and don’t want to use sugar. It has zero calories.

Step 5: Add Mango Puree, Heavy Cream Or Coconut Milk

My bloomed gelatin mixture is ready. Now I am going to add heavy cream to it. You can also use coconut milk if you are a vegan. The mango puree is also ready to get into the mixture.

So I will be mixing all of them properly with a quick stir. The entire prep time may take about 5 to 10 minutes.

Step 6: Heat The Mixture

Now it is time to heat my mango mixture. For that, I will be taking a saucepan, pouring the mixture on it, then cooking it at medium-low heat (162° C). Meanwhile, I must keep whisking so that the gelatin powder dissolves and becomes thick. It may take about 5 mins.

Step 7: Pour The Mixture In Molds

Silicone molds would be perfect for wrapping the pudding. So, I am going to first grease it with vegetable oil. Then pour the mixture into the molds. Once it cools down, I will keep it in the fridge for a night.

Step 8: Add Cream

This step is optional for you guys. But I would love to add toppings to my recipe. Drizzling a thin layer of cream is a great idea; what say? I don’t want my mango pudding to be thin.

So I am going to use heavy cream. And for lactose-intolerant people, I would suggest using coconut milk instead of heavy cream.

Step 9: Add Toppings

Then I will put some small dice of mangoes. Unless I use mango dice on my pudding, I am not going to have the satisfaction that I actually preparing a Chinese mango pudding. So yeah, mango dice are a must for this recipe.

Don’t worry.

I have taken out the pudding from the refrigerator the next morning. Now, it is my time to enjoy this delicious Chinese mango pudding.

What Types of Mango Are Best For Chinese Pudding?

We only need juicy and sweet mangoes for a Mango Pudding. Calipso and KP mangoes are examples of it. 

KP or Kensington Pride mangoes look orange and yellowish on their skin. You can identify them by smelling their surface. They should have a floral, strong, and mango-like smell with a hint of sweetness.

On the other hand, Calypso also has a combination of orange and yellow skin. Their smell is beautiful, and the mangoes will last for a long time.

After viewing the experience of my mango pudding recipe, you all may want to try it out. And some of you can be newbies trying out the steps for the first. Well, the tips that I am going to share will benefit everyone, not only the newbies.

  1. Some of us stir the mixture roughly and quickly to get our job done quickly. But that is not going to be a solution. In fact, stirring vigorously will create bubbles, trap the liquid, and won’t bring out the smooth texture we want.
  2. Avoid some amount of mango pulps to strain. But trust me, only properly pureed mangoes can make a mango pudding worth it. 
  3. Must use fresh mango.
  4. You can use mango ice cream as the heavy cream in the mixture. But make sure you have used a good-quality mango ice cream. Or else you won’t get the flavourful taste of your mango pudding.

Homemade mango pudding cannot be recommended to store at room temperature. It would be best if you stored it in the fridge as this pudding is meant for refreshment. Keeping it in the refrigerator can give you savory mango pudding for up to 4 days.

Instructions

  5. Add heavy cream (or coconut milk for vegans) and the strained mango pulp to the mixture. Stir until well combined.
  6. Transfer the mixture to a saucepan and cook over medium-low heat, stirring continuously until it thickens (reaches around 162°C or when gelatin dissolves). This should take about 5 minutes.
  7. Grease silicone molds with vegetable oil, then pour the mango mixture into the molds.
  8. Allow the molds to cool, then refrigerate them overnight.
  9. Optionally, add a thin layer of heavy cream (or coconut milk) as a topping and garnish with diced mangoes before serving.
